I. INTRODUCTION

DEFINITION

Blue or purple corn is an older, less hybridized type of corn that is very nutritious and contains a number of chemicals needed for rapid development. For this reason, it is one of the special foods for rapid development.

Blue corn chips. Blue corn is becoming more available on earth. The most common product and the product that works the best is in the form of blue corn chips.

We know they tend to be greasy and salty.  Many also contain refined vegetable oil.  However, some brands are not too bad and lightly frying the chips in oil seals in certain nutrients.  The chips work better than blue corn tortillas or blue corn cereal.

Recommended brands. At this time, we like Late July Blue Corn Dippers, Garden Of Eatin No Salt Added, Xochitl, Siete and Simple Truth found in Kroger food stores. Other brands are also okay, but these are our current favorites.

History.  Blue or purple corn is an ancient heirloom type of corn that comes originally from central Mexico.  Today, it is grown in several nations, including the United States.

Hybridization.  Blue or purple corn are not too hybridized or modified genetically, as is white corn.  Many corn allergies involve the hybrids, so some people who do not tolerate corn products well can eat blue or purple corn.

Gluten-free.  Corn is gluten-free or very low in gluten, so it can be tolerated by many people who are sensitive to gluten.

WHEN TO EAT BLUE CORN CHIPS

When to eat blue corn chips.  Ideally, eat them with every meal, and eat them after eating your protein and after eating your cooked vegetables.  In other words, eat protein first, then vegetables and then a few blue corn chips.  Eating food in this order is best for digestion.

Snacking on blue corn chips.  One can have blue corn chips as a snack.  This is okay, but not as good because snacking is hard on digestion. It is best to eat blue corn chips as part of your meals.

II. NUTRITIONAL QUALITIES

Blue corn is very nutritious.  Among its nutrients are anthocyanins.  These are pigments that give the corn the blue color.  They are powerful antioxidants.  They have specifically been studied for their cancer-fighting ability and have definite anti-cancer properties.

Zeozanthene.  The deep purple or purple color of this corn is due to the presence of many vital nutrients.  One group of these is the xanthenes such as zeozanthene.  These are powerful anti-oxidants and have other nutritional benefits. 

These are the same nutrients found in other bluish foods such as blueberries, blackberries, grapes and raisins.  However, we much prefer the xanthenes in the purple corn rather than those in the berries because fruit is too yin for optimum health.

Selenium.  Blue corn is rich in selenium compounds.

Gold.  Blue corn contains some unusual gold compounds that are difficult to find in any other foods or in supplements.

Rancidity. Oils used in blue corn chips can become rancid.  Always check the expiration date to make sure they are fresh.

Poor quality oil or salt.  The brands we recommend are okay, as are most of them.

High glycemic index.  All corn products have a high glycemic index and this can cause the blood sugar level to fluctuate more than some other foods if one eats this product.

Yeast and cancer.  If there is a lot of yeast or cancer in the body, one will have difficulty tolerating blue corn chips.  In this case, just eat fewer of them.

This problem disappears as one’s health improves on a complete development program.

Too many. Some people overdo on blue corn chips.  Please do not do this.  Eat a maximum or about 8 to 10 per meal.

Other chips.  Do not eat other chips such as potato chips.

Omega-6 fatty acids.  Foods containing vegetable oils all contain some omega-6 fatty acids.  Most people get too much of these in all their food.  We balance this by giving a supplement of omega-3 fatty acids or by eating sardines.

AGES.  All fried foods contain some advanced glycation end products or AGES.  These are harmful to the body.  Blue corn chips are cooked very quickly so they do not contain a lot of AGES.  For details, read AGES

For safety and development, most of the diet must consist of plenty of well-cooked vegetables with each meal, along with some protein and the rest of the foods recommended in Food For Daily Use.

INTOLERANCE TO CORN

Some people do not tolerate corn very well. This is due to poor digestion, too much yeast in the body, or a yin condition of the body. In this case, begin with just a few blue corn chips daily if that is all you can tolerate. As the body heals, you will be able to handle more blue corn chips.

- Purple corn is often better tolerated than white or yellow corn.

- Taking a digestive enzyme, eating just a few purple corn chips at a time, and eating them alone may also help if food allergies are a problem.

A common cause for food intolerance is a “leaky gut”.  This simply means that the lining of the small intestine is irritated and too permeable, as a result.  This allows some undigested or partially digested food components and perhaps toxic chemicals to be absorbed into the blood stream, causing adverse reactions.

The solution is to rebuild the small intestine.  This occurs automatically if you follow the development diet correctly.

However, you need to be fairly strict with it.  One must eat a lot of well-cooked vegetables and mainly the preferred vegetables.  One must also avoid wheat, most raw food including salads, all fruit and sweets, smoothies, shakes, food bars, and most food chemicals.

Blue corn substitutes. If you cannot tolerate blue corn chips at all, or cannot obtain blue corn tortilla chips, you may substitute:

1. Yellow organic corn chips.

2. Yellow corn meal cereal or polenta.

3. The grain teff. Teff must be cooked – either pressure-cooked for about 7 minutes are cooked in a regular pot with water for about 25-30 minutes.

None of these are as good as blue corn chips, but they are better than nothing and better than other grains. Millet is also an excellent grain for development.

OTHER PURPLE CORN PRODUCTS

Dippers and taco shells.  These are basically the same as the tortilla chips and are fine.

Purple corn pozole. Pozole is a Mexican dish in which one cooks the entire corn kernel until it is a chewy consistency.  They usually eat it in a soup.

We do recommend purple corn pozole, blue corn tortillas or crackers. The quickly and lightly fried chips preserve certain vital nutrients much better. With pozole, to soften the purple corn enough requires so much cooking that it damages the vital nutrients in the corn.

BLUE CORN AND DEVELOPMENT

We highly recommend blue or purple corn tortilla chips because they contains a number of chemical compounds needed for Development.  Some are selenium and gold compounds, and there are others, we are told by our development team.

STORING BLUE CORN

Store purple corn chips in a cool, dry place. Inside the refrigerator is very good.

HOW IMPORTANT IS A TRACE OF LIME IN PURPLE CORN CHIPS?

Some brands of purple corn products state on the label that the corn is prepared using a trace of lime.  This is an ancient way of loosening the hull of the corn, and may enhance the product in other ways.

While soaking in lime may enhance the overall nutrition of corn, it does not increase the amount of the chemicals needed for development, so we don’t require or recommend it.
